  1. Fill a medium-large pot with water and bring to a boil.
  2. While the pot of water is boiling, wash cauliflower head and cut off the florets.
  3. Add cauliflower florets to boiling water & boil for ten minutes, or until tender.
  4. Once tender, drain water from cauliflower florets.
  5. Immediately squeeze out as much excess water from drained cauliflower as you can, otherwise your mashed cauliflower may become watery. NOTE: This step needs to be done quickly, as the cauliflower needs to be hot when added to food processor.
  6. Add florets to food processor along with melted butter, sour cream and cheddar cheese. Blend until smooth.
  7. Add garlic powder, sea salt and onion powder to food processor. Blend until mixed completely.
  8. Serve hot. You can garnish with a little parsley. Yields 6 servings.
