Low Carb Cheesy Garlic Mashed Cauliflower (Faux Mashed Potatoes) – Keto Friendly
I’d be lying (and honestly, we probably all would be) if I said I never have cravings for comfort food, such as mac and cheese and mashed potatoes. Having turned my way of eating over to Keto (Ketogenic), high carb meals are no longer an option, including foods such as noodles and potatoes. That doesn’t mean I’m left to suffer or go without, however. The truth is cauliflower is a great substitute for mashed potatoes (as well as many other things). You may not believe me now, but I promise after you try this recipe, you’ll change your mind!
This dish has truly been a lifesaver for me many times, whether it’s a personal hankering for mashed “potatoes”, meal prep or a family gathering I’m not looking to cheat on my diet for, it performs well. Quite a few of my non low carb friends & family enjoy them, so that’s a win in my book!
Without further ado, here’s how to make my low carb cheesy garlic mashed cauliflower. PS: You’re welcome.

- 1 medium Head of Cauliflower
- 1/2 cup Butter (melted)
- 1/3 cup Sour Cream (full fat)
- 1/2 cup Shredded Cheddar Cheese
- 1/2 tsp Sea Salt or Pink Himalayan Salt
- 1 tsp Garlic Powder
- 1/2 tsp Onion Power (optional)
- 1 dash Parsley Flakes (optional)

- Fill a medium-large pot with water and bring to a boil.
- While the pot of water is boiling, wash cauliflower head and cut off the florets.
- Add cauliflower florets to boiling water & boil for ten minutes, or until tender.
- Once tender, drain water from cauliflower florets.
- Immediately squeeze out as much excess water from drained cauliflower as you can, otherwise your mashed cauliflower may become watery. NOTE: This step needs to be done quickly, as the cauliflower needs to be hot when added to food processor.
- Add florets to food processor along with melted butter, sour cream and cheddar cheese. Blend until smooth.
- Add garlic powder, sea salt and onion powder to food processor. Blend until mixed completely.
- Serve hot. You can garnish with a little parsley. Yields 6 servings.
